You may hate me for what I am about to say, but … gingerbread cookies are overrated. Few years ago when I was doing my Christmas baking I was really excited to make this recipe and guess what – in the end they turned out the same as the Spekulatius that you get in every other Billa. Of course you can imagine that I was incredibly disappointed, but last year I found another recipy that was incredbile and so delictous that I could not share it with you. As you can imagine I made it once again this year and I made a double batch since with my family the cookies are never enough.

Ingredients: 

2 eggs
1 cup sugar
1 cup honey
2/3 cup oil
2 tsp cinnamon
1 tsp baking soda
1 pack baking powder
2 tbsp white vinegar
3 cups flour (it can be a bit more if needed for kneading)

First you should combine your wet ingridients, so add the eggs, oil, vinegar and honey to a bigger bowl. Then go on to add the cinnamon, baking soda, sugar and baking powder and sift the flour through a sieve. After you mix all of it, knead it to form a dough, once it’s done it will be quite sticky so pop it in the fridge overnight or at least for a few hours before you start rolling it.

After the dough was all cooled, I rolled it on a richly sprinkled with flour service and cut different shapes out of it. Put them on a baking tray, further apart from each other since they will grow in size. Bake until they are golden, otherwise they will be too crispy. If you want to make the cookies extra special, I love to stick them together with rose hip jam or chocolate. Of course you can decorate them with icing as well and personalize them. Plus, it is a great idea for a Christmas gift for all your loved ones – who doesn’t like cookies??
